Coffee Grind Settings: Complete Guide for Perfect Coffee

Grind is the most important and most misunderstood variable in coffee preparation. Exceptional quality coffee with an incorrect grind will produce mediocre results. Understanding grind unlocks the full potential of your coffee.

Why Grind Is So Important

When hot water passes through ground coffee, it extracts soluble compounds: sugars, acids, aromatic oils, caffeine. The particle size of the grind determines the speed and efficiency of this extraction.

  • Fine particles: large contact surface → fast extraction → risk of over-extraction (bitterness)
  • Coarse particles: small contact surface → slow extraction → risk of under-extraction (acidity, bland)

Each brewing method has a different optimal extraction time, hence the need to adapt the grind.

⚙️ Choosing a grinder. Manual or electric? Conical or flat burrs? Our manual vs electric grinder comparison guide answers all your questions.

Grind for Espresso: The Most Delicate

Characteristics

Espresso requires a very fine and consistent grind. Water at 94°C passes through 18-20g of coffee in 25-30 seconds under 9 bars of pressure. The slightest grind variation radically changes the result.

How to Adjust

Stopwatch method:

  1. Start the extraction and time it
  2. Target: 25-30 seconds for 36 mL (double espresso)
  3. If < 20 seconds → grind too coarse → make it one notch finer
  4. If > 35 seconds → grind too fine → make it one notch coarser

Visual signs:

  • Correct extraction: steady golden-brown stream, thick crema
  • Over-extraction: dark drops, very bitter coffee
  • Under-extraction: too-fast flow, watery and acidic coffee

Baratza Encore Settings for Espresso

The Baratza Encore isn't optimized for competition espresso, but produces acceptable espresso:

  • Recommended range: settings 5 to 12
  • Typical starting point: setting 8
  • Adjust in single-notch increments

Grind for Filter Coffee Maker

Characteristics

The filter coffee maker (or drip machine) is the simplest method to dose. Water drips slowly through the coffee for 4-8 minutes. The grind should be medium to allow steady flow without clogging the paper filter.

  • Baratza Encore: settings 18-25
  • Krups GVX231: settings 8-12
  • De'Longhi KG79: settings 9-14

Standard Dosing

  • Classic ratio: 60g of coffee per 1 liter of water
  • For 2 cups (300 mL): 18g of ground coffee
  • Extraction time: 4-6 minutes

Grind for V60 and Chemex

V60 (Hario)

The V60 is a pour-over method. It requires a slightly finer grind than for a filter machine because extraction time is controlled manually.

Baratza Encore setting: 14-22 Extraction time: 2 min 30 sec to 3 min 30 sec for 300 mL Technique: 30-second pre-infusion, then circular pours

Chemex

The Chemex uses thicker filters that slow the flow. The grind should be slightly coarser than the V60.

Baratza Encore setting: 22-28 Extraction time: 4-5 minutes for 500 mL

Grind for French Press

Characteristics

The French press is a steeping method (no paper filtration). Coffee steeps in hot water for 4 minutes, then the plunger retains the grounds. The grind should be coarse to:

  1. Prevent particles from passing through the metal filter
  2. Allow steeping without over-extraction
  • Baratza Encore: settings 28-35
  • Krups GVX231: settings 14-17
  • Hario Mini Mill: 8-10 clicks from closed

Standard Dosing

  • Ratio: 70g of coffee per 1 liter of water
  • For 300 mL: 21g of coffee
  • Pre-infuse with a little hot water, then fill, wait 4 minutes, plunge

Grind for AeroPress

The AeroPress is the most versatile method: extraction time can vary from 1 to 3 minutes, so the grind varies depending on the recipe chosen.

  • Express recipe (1 min): fine grind (setting 10-14 on Baratza)
  • Classic recipe (2 min): medium-fine grind (setting 15-20)
  • Inverted long recipe (3 min): medium grind (setting 18-22)

Special Grinds: Moka and Cold Brew

Moka Pot (Bialetti)

The moka pot builds pressure through steam. The grind should be fine but not as fine as espresso — similar to fine salt.

Baratza Encore setting: 10-16 Warning: grind that's too fine can block the filter and create dangerous overpressure.

Cold Brew

Cold brew steeps for 12 to 24 hours cold. The grind should be very coarse to prevent over-extraction.

Baratza Encore setting: 35-40 Ratio: 100g of coffee per 1 liter of cold water

How to Identify a Bad Grind

Visual Test (Espresso)

  • Dense golden crema = correct extraction
  • Dark, bitter crema = over-extraction
  • No crema or pale crema = under-extraction

FAQ

What grind for a filter coffee maker? Medium grind, similar to coarse salt. Setting 18-25 on a Baratza Encore.

What grind for espresso? Very fine, similar to powdered sugar. Setting 5-12. Adjust based on extraction time (target 25-30 seconds).

What grind for a French press? Coarse, similar to raw sugar. Setting 28-35. Steeping time is 4 minutes.

Does grind change with humidity? Yes, in humid weather grind clumps together. Adjust one notch coarser.

How much coffee to grind in advance? Ideally, only grind what's needed for the immediate session. Ground coffee loses aromas within 15-30 minutes.

Conclusion

Mastering grind means mastering coffee quality. Start with the baseline settings for your method, taste, and adjust gradually. The rule is simple: too bitter → coarser, too acidic → finer.
